I brewed the batch of Belgian Ale last night. I even used Brad’s wort cooler. Very nice.
I pitched the yeast around 7PM and it’s still not fermenting. It’s been almost 14 hours now…
I’m starting to worry. I worry every time I brew that the yeast won’t start. It’s only happened once, but the fear haunts me.
Please start fermenting….

Yeah, yeast can be a real bitch sometimes. Learned that in all my bread baking.
I always keep mine in the freezer and test it before I get started, just to make sure it hasn’t died.
And why didn’t someone tell me my url was spelled wrong this whole time? I just figured that out. 😉

The creatures will arise.
The main concern that you’re trying to address by a quick start to the yeast is any wild beasties taking over your fermentation. If you have observed reasonable sanitation methods you’ll be fine.
As Brad says, patience is the key.
If the lag really bothers you, I guess you could make a starter and time your brewing session such that you pitch at high krausen for your starter.
