ummmmmmmm
the traditional meat on the west coast to smoke is the tri-tip, but keep in mind that the meat of choice for smoking is the brisket, which oldly enough costs more than half the price in the midwest than out there to the left.
any smoking competition you could ever image participating in feature one meat and one meat only... you know it by now... brisket.
it is so marbled with fat and nearly impossible to over cook, making it the perfect choice for the dry heat of smoke.
one more time... brisket.
