Posted by: Anita Rowland [http://www.anitarowland.com] on April 27, 2003 05:41 AMActually, it's not porketta. The defining item in goetta is the oatmeal. There is steel cut oatmeal in the mix. IMHO, it's what gives goetta it's unique texture and mouth feel. The pork & spices add the flavor.
